Mashed Cauliflower

I remember as a child trying, HARD, to convince my mother that a potato was a vegetable  She, in return, would give a lengthy explanation of why a potatoe is not a vegetable.  I would walk away thinking, it’s a vegetable!  Like most things, she was right.  A potatoe is not a vegetable.

Guess what is a vegetable CAULIFLOWER!

Now that I am a mother this recipe for mashed cauliflower is a staple in our home.  My children they love it.  They actually prefer it to potatoes!

Why Mashed Cauliflower?  Well, for starters, mashed cauliflower is inexpensive to make.  It adds fiber to your diet…and…it taste really good, at least this recipe does!  This is also a great alternative for folks who are allergic to potatoes and potatoe starch.

This is an easy recipe.  No fancy French terms or exotic ingredients.

This is the best mashed cauliflower recipe I have ever made. It is a perfect creamy side dish.

Ingredients

  • 1 Large Head of Cauliflower

  • 1 White Onion

  • 1/2 Cup Heavy Cream

  • 4 Tablespoons Salted Butter

  • 1/2 Teaspoon Salt

  • 1/2 Teaspoon Pepper

  • 1/2 teaspoon Thyme

Directions

  • Boil the Cauliflower and onion until it can easily be pulled apart with a fork.

  • Drain Cauliflower in a colander.  Place cauliflower in a food processor with the cream, 3 tablespoons of butter, salt, pepper, and thyme.

  • Blend until creamy and smooth.  Transfer to a serving dish and top with 1 tablespoon of butter.  Garnish with thyme.

  • Serve and Enjoy!
